You know what Inuyat is? Maybe I can call these Sampaloc Jam for a much simpler name, just that I know since I was a kid that this is called Inuyat for the Tagalog Folks. I'll let you in a little health tip. For those people who don't like drinking plain water and very fond of drinking softdrinks well this one is for you. I was talking to my Auntie, sister of my father, while she was cooking a casserole of this and she told me that she was making or cooking this to cure her UTI sickness which was aggrieved by not drinking plenty of water. As a remedy her doctor suggested that she cook and eat Inuyat "Sampaloc Jam" for her to crave for water and in turn have her fill of the required bottles of water to be drink. Why? Because like this food, all other foods that have the taste of mixed sweet and sour was discovered to make us crave for more water thus making us healthier and eliminate the occurrence of urinary tract inspection.
How to cook it? Just buy a half kilo of peeled tamarind and cooked it with 1 kilo of brown sugar and water. Let it boil for many minutes or until the syrup gets sticky and voila! You have a delicious Sampaloc Jam. Try it for yourself it's so yummy! lucky me I don't have to cook as I always have free bottles full of this sweets from my Auntie Elvie.
